Melt in the mouth MACAROONS

These coconut macaroons are quite possibly the easiest winter warmer snack that I love to prepare!

All you need is:

  • 5.5 cups of flaked coconut (available in all good supermarkets) 1 cup = 250ml
  • 1 can of condensed milk, I usually use Carnation Milk
  • 2/3 drops of vanilla essence

Preparation:

  • Preheat the oven to 165 degrees C
  • Line parchment paper (baking sheets)
  • Combine all of the ingredients together in a mixing bowl, and mix well
  • Scoop mixture either with an ice cream scooper or just a spoon but make sure you have a nice amount and preferably in a round shape!
  • Place the mounds onto the baking sheet and pop in the oven
  • Keep an eye on the macaroons – you want a nice brown colour on the edges, after around 12 minutes check on them – if you want a browner edge  give them a couple more minutes
  • Voila! You will have the perfect coconut macaroons
